CONCESSION STAND INFORMATION

GENERAL INSTRUCTIONS

  • Wear disposable gloves when handling food. Ice is considered a food.
  • Change gloves as they become soiled or torn, before beginning a new task, after handling
  • Non-food items (cash, trash), before handling cooked or ready-to-eat foods, WASH HANDS between changes.
  • WASH HANDS before starting work, before handling food, after handling cash, after using the restroom, after eating, between handling different types of food (raw meat to pretzels), after coughing, sneezing or blowing nose, after touching hair, face, nose, after handling dirty equipment, after cleaning or handling chemicals, after handling trash etc. If in doubt— WASH HANDS. Guess what? They have a special sink designated just for washing hands. And absolutely nothing else. It is a no-no to use the hand washing sink for anything else.
  • Keep food contact surfaces cleaned and sanitized as you go.

  1. The first and most important one is having the required number of people in the stands when the gate is open.  If we don’t have the required number in the stand at the beginning then we will only earn the minimum even if we meet the other requirements.  We must maintain the  minimum # in the stand  throughout the game.  WE MUST BE IN OUR STAND BY 4:30.  I will then assign jobs and give out job discriptions.  We must be ready to serve when the gates open at 5:30.
  2. Wearing matching shirts and caps.
  3. Inventory must match cash.  INVENTORY IS MONEY.  For example:  coke cups cost the same amount  empty as they do with water or coke in them.   So you can’t give away an empty cup.
